Wine List Assignment  

                                                   

 

Construct a well balanced wine list consisting of still and sparkling wines. The list should not include fortified or dessert wines. The list must be limited to no more than forty wines total. The list should represent a variety of styles and be balanced along the following criteria:

- light, medium and heavy body

- grape varietals

- wine making regions

- price points within styles – i.e. within heavy bodied reds offer something in both   high and low price points.

 

If you need a particular restaurant for a point of reference, use the Vita Nova dinner operation -- in other words, an upscale, full service restaurant with a balanced menu. The list should be organized within the categories of white, red, rose and sparkling wines from lightest to fullest in body. The wine list should include:

- the proper names of the wines

- the price that you plan to charge for the wine

- identify what wine you will offer by the glass along with the price per glass

- two or more wine flights are encouraged

 

Wine lists will be evaluated based on:

- how well the list meets the above stated criteria

- the degree to which the list incorporates the ideas expressed in class regarding                     wine lists.
