Assignment 2: Training in a Day?

Read the following case study and answer the questions that follow.

Sally is one of the managers of a family-style restaurant with about 50 people on staff. She reports to Gary, the general manager.

Sally is the manager on duty of the restaurant and is completely in charge of the restaurant from 3:00 p.m. to its closure at 12:00 midnight. Her responsibilities include calculating weekly payroll and taking care of special projects for Gary.

Sally is already extremely busy with the currently assigned duties and, to top it off, Gary hands her a very stressful and time-consuming project.

“Sally,” said Gary, “things are not going very well around here. Our sales are down, which in return means profits are down, employee turnover is at an all-time high, and we have multiple customer complaints daily. I am constantly hearing negative things about our food, service, and prices. I really feel our employees have more potential than this, but they are not putting in their best efforts. Maybe we should incorporate more training programs. I would like to have us personally train or retrain each of our employees. I would like to start this tomorrow as I have two new employees joining
(a hostess and a dishwasher) at 10:00 a.m. Please look into how we can train our employees to do a better job.”

He provides Sally with a copy of a book called Supervision in the Hospitality Industry
and tells her to read the chapter on employee training and development.

Questions

  • Do you think Gary has unrealistic expectations from Sally? Why or why not?
  • What suggestions do you have for Sally to come up with training requirements and a training schedule by tomorrow morning for the two new employees?
  • How can Sally and Gary convince the current employees that retraining is necessary and get them to come for these training sessions?
  • How can Sally and Gary find the time to proceed with training every employee and when should this training take place?
  • Should external help be considered in training the employees?
  • What should be the time frame for each employee to be trained? When should Sally and Gary expect to see the results of their training?
  • What kind of permanent training program should be put in place once all current employees are trained or retrained?
